Every product we make has a story — and some take months of trial, error, and creativity before they’re ready to be shared. One of our proudest collaborations has been with Cosy Club, a brand known for their welcoming spaces, playful interiors, and inventive menus.
The Challenge: Something Rich, But Not Brioche
Cosy Club came to us with a clear idea. They wanted a loaf that had the indulgence of clotted cream and the richness of butter — but without the light, fluffy sweetness of traditional brioche. It needed to be shareable, memorable, and completely unique to their menu.
It wasn’t an easy task. Over the course of eight months, we developed, tested, and refined batch after batch. Some recipes leaned too sweet, others too soft, but with each bake we got closer to the perfect balance.
The Final Recipe: Clotted Cream Tear & Share Loaf
The end result was exactly what Cosy Club envisioned: a Clotted Cream Tear & Share Loaf with a rich, buttery texture, beautifully golden crust, and irresistible flavour. It’s a centrepiece dish designed for sharing — indulgent, but not overwhelming.
Creative Twists Along the Way
During the development process, we also experimented with flavour twists. One of our favourites to emerge was the Miso Tear & Share, combining buttery richness with the subtle savoury depth of miso. It’s an unexpected combination that quickly became a star in its own right.
Beyond Loaves: Focaccia for the Menu
Our collaboration didn’t stop at tear and share loaves. For Cosy Club’s famous club sandwiches, we created a Mini Sea Salt Focaccia Duo. Each focaccia is carefully hand-dimpled, brushed with oil, sprinkled with sea salt, and baked to perfection — a small detail that elevates the entire dish.
