In 2025, Baker Tom’s marks an incredible milestone: 20 years of baking real bread in Cornwall. What began as two loaves in a home kitchen has grown into a business that not only serves communities across the South West but also champions local producers, sustainability, and traditional craft.
From Two Loaves to a Cornish Staple
Back in 2005, 23-year-old Tom Hazzledine returned to Cornwall after travelling in India. While working at a local farm shop, a bread supplier let them down—so Tom offered to bake some himself. With two loaves made in his mum’s kitchen and delivered by bike, Baker Tom was born.
The bread sold out instantly, and soon Tom was baking daily, moving from his kitchen to a small bakery unit. Farmers’ markets, delis, and shops across Cornwall began stocking his now-famous loaves.
Growing with the Community
Over the years, Baker Tom’s has grown from a one-man band into a much-loved bakery brand with shops in Penzance, Falmouth, Pool, Wadebridge. But even as we’ve grown, our focus has remained the same: real bread, made with care, using the best ingredients we can find.
A big part of that has been working with and supporting other Cornish producers. For over a decade, we’ve proudly partnered with Boddington’s Berries for our jams and preserves, and Rodda’s for our clotted cream and dairy. Our shops also feature a curated selection of local drinks, oils, and larder essentials from makers we admire—helping to strengthen Cornwall’s incredible food scene.
Promoting these small businesses in our bakeries and cafes is just one way we invest in our community. We believe the best food comes not just from skill, but from connection.
Overcoming Challenges with Resilience
Our café on Wilson Way in Redruth became a local institution, known for hearty breakfasts and unlimited toast. But in 2022, Storm Eunice caused devastating damage, tearing the roof from our main bakery and café. Despite the setback, we rebuilt—transforming the site into a warm, welcoming takeaway space serving bacon baps, hot drinks, and all the Baker Tom favourites.
During the pandemic, we launched our online shop—allowing customers to order fresh bread and sweet treats delivered straight to their doors. It’s now an essential part of the business, helping us reach new customers all over the UK.
Investing in a Sustainable Future
As we celebrate our 20th year, we’re also looking firmly toward the future. In 2025, Baker Tom’s moved into a larger, purpose-built bakery unit designed with sustainability at its core. The new site features solar panels, improved energy efficiency, and space for continued growth and innovation.
We're also proud to now use more organic and regenerative flours in our range—supporting farming practices that rebuild soil health, capture carbon, and help protect our planet. Sustainability isn’t a trend for us—it’s a responsibility, and something we’re deeply committed to building into every part of our process.
