This is a great recipe for BBQ season, and by making your own homemade ketchup you can tweak the spices and sugar levels to your liking, and even add some chill for a spicy version, and all without any additives or preservatives found in store bought ones!
· 1 medium white onion
· 50ml rapeseed oil
· 2 cloves garlic
· 1 teaspoon ground ginger
· Pinch all spice
· 50g tomato puree
· 3 tablespoons brown sugar
· 100ml apple cider vinegar
· 800g chipped tomatoes
Begin by slicing the onion and chopping the garlic as small as possible. Heat the oil in a medium heavy bottom saucepan and sweet the onion in the oil over a low heat until soft and tender but with out any colour, adding the garlic about half way through. Once ready add the tomato puree and spices and cook into the onion for a few minutes before adding in the tomatoes, vinegar and salt and pepper to season. Cook over a low heat stirring occasionally for about 45 minutes, before blending in a food blender or with a stick blender until very smooth. Allow to cool and store in the fridge for up to 4 weeks.
