On Baker Tom’s Vegan Brioche Bun
Fresh, vibrant and full of flavour — this plant-powered burger brings together crispy Lebanese-spiced falafel, cool vegan tzatziki, peppery rocket and creamy avocado, all served in a soft vegan brioche bun. A perfect balance of crunch, freshness and richness.
🛒 Ingredients (Serves 2)

6 falafel (shop-bought or homemade, Lebanese-spiced if possible)

Handful fresh rocket

1 ripe avocado, sliced
Vegan tzatziki

½ cup thick vegan yoghurt
-
½ small cucumber, finely grated & squeezed dry

1 clove garlic, finely minced

1 tsp lemon juice
-
1 tsp olive oil
-
Pinch salt
Optional extras

Pickled cucumber or turnips

Chilli sauce or harissa

Sliced red onion
🔪 Method
1. Make the vegan tzatziki

Combine vegan yoghurt, grated cucumber, garlic, lemon juice, olive oil and Cornish sea salt.

Mix well and chill until needed — flavours improve as it rests.
2. Cook the falafel

Oven: Bake according to packet instructions until hot and crisp.

Pan: Fry in a little oil for 3–4 minutes, turning until golden and heated through.
3. Toast the buns

Lightly toast the cut sides of the vegan brioche buns until warm and soft with a light golden edge.
4. Prepare the avocado

Slice just before assembling and lightly season with a pinch of salt and a squeeze of lemon (optional).
5. Build the burger

Base bun → generous spoon of vegan tzatziki → rocket → falafel → sliced avocado → extra tzatziki or chilli sauce (optional) → top bun.
