Packed with flavour, texture, and festive nostalgia, this gourmet turkey sandwich combines juicy roast turkey, tangy homemade cranberry sauce, and rich pork & apricot stuffing, all tucked inside a soft seeded brioche roll.

🥪 Festive Turkey Sandwich

Ingredients

  • 1 seeded brioche roll or classic brioche roll (such as Baker Tom’s)

  • Cooked turkey slices

  • 1–2 tbsp homemade cranberry sauce recipe here

  • 1 thick slice of pork & apricot stuffing (recipe below)

  • A handful of fresh rocket (arugula)

Method

  1. Slice your brioche roll in half and lightly toast if desired — this gives a lovely golden edge and helps it hold up to the fillings.

  2. Spread a generous layer of homemade cranberry sauce on the base.

  3. Add a thick slice of stuffing, then layer on the turkey and rocket.

  4. Close the sandwich and press lightly to help everything settle together.

  5. Serve immediately with your favourite local crisps or a festive side salad.

🍖 Pork & Apricot Stuffing

This easy, flavour-packed stuffing is the secret ingredient that takes your sandwich from simple to spectacular. Juicy sausage meat meets sweet apricots and soft breadcrumbs for the perfect balance of savoury and sweet.

Ingredients

  • 6 good-quality pork sausages

  • 100g dried apricots, chopped

  • 50g breadcrumbs

  • 1 egg

  • Salt and pepper, to taste

Method

  1. Preheat your oven to 165°C.

  2. In a large bowl, squeeze the sausage meat out of the skins and combine with the chopped apricots, breadcrumbs, egg, salt, and pepper.

  3. Mix well until evenly combined.

  4. Press the mixture into a baking dish, cover with a layer of baking paper and foil, and bake for about 1 hour, or until piping hot and fully cooked.

  5. Cool before slicing — the flavours deepen as it rests.

  6. Store in the fridge and use within 3 days.
