A properly crispy, cheesy tuna melt is the ultimate comfort food. This version, made with Baker Tom’s 100% wholemeal bread, a blend of mozzarella and mature Cornish cheddar, and the optional (but highly recommended!) pickled red onions, is toasted in butter for a golden, crunchy finish.
Perfect for a quick lunch, easy dinner, or satisfying snack, this tuna melt is best enjoyed straight from the pan.

Ingredients
- 8 slices of Baker Tom’s 100% Wholemeal bread
- 300g tuna, drained
- 50g mayonnaise
- 2 spring onions, finely sliced
- 1 red chilli, finely chopped
- Cornish sea salt & black pepper, to taste
- 75g mozzarella, grated
- 75g mature Cornish cheddar, grated
- Pickled red onions (optional but delicious!)
- 100g butter, at room temperature
Method
Prepare the Filling
In a large bowl, mix together the **drained tuna, mayonnaise, spring onion, red chilli, and both cheeses. Season generously with Cornish salt and black pepper.
If using pickled red onions, set them aside for layering into the sandwiches.
2. Assemble the Sandwiches
- Slice 8 pieces of Baker Tom’s brown bread.
- Butter both sides of each slice.
- Evenly spread the tuna mixture over 4 slices.
- Add a layer of pickled red onions, if using.
- Top with the remaining 4 slices of bread to make sandwiches.
3. Toast to Golden Perfection
- Heat a large frying pan over medium heat.
- Carefully place the tuna melt sandwiches into the pan.
- Cook for 3–4 minutes per side, pressing down gently with a spatula, until deep golden brown and the cheese is melted and gooey.
- Flip and repeat on the other side.
4. Serve & Enjoy
Slice in half and serve immediately—hot, crispy, and oozing with melted cheese.
