Ingredients
For the Soup:
- 1 medium celeriac (about 600g), peeled and diced
- 1 medium potato, peeled and diced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 litre vegetable stock
- 100ml cream (optional, for extra richness)
- Salt and pepper to taste
For the Croutons:
- 2 slices of Baker Tom’s rosemary and sea salt focaccia
- 2 tbsp olive oil
Method
Step 1: Prepare the Soup
1. Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant.
2. Add the diced celeriac and potato to the pan, stirring to coat them in the oil. Cook for 5 minutes to allow the flavors to meld.
3. Pour in the vegetable stock, bring the mixture to a boil, then reduce the heat to a simmer. Cook for 20–25 minutes, or until the celeriac and potato are tender.
Step 2: Make the Croutons
1. While the soup is simmering, preheat your oven to 200°C (180°C fan).
2. Cut the focaccia into bite-sized cubes and place them on a baking tray.
3. Drizzle with olive oil and toss to coat.
4. Bake for 8–10 minutes, or until the croutons are golden and crispy.
Step 3: Blend and Serve
1. Use an immersion blender to purée the soup until smooth. For a silky texture, pass it through a fine mesh sieve.
2. Stir in the cream (if using) and season with salt and pepper to taste.
3. Ladle the soup into bowls, topping each with a handful of crunchy focaccia croutons.
