  • 500g beef mince
  • Half a loaf of Baker Tom's focaccia
  • 2 tsp oregano (1 for meatballs, 1 for sauce)
  • 1 egg ( we like St Ewe)
  • 1 tsp garlic powder
  • 2 tbsp breadcrumbs
  • 1/2 chopped onion
  • 1 chopped garlic clove
  • 1 tin chopped tomatoes
  • 1 tbsp tomato paste
  • 1 beef stock pot
  • Parmesan or grated cheddar to serve


  1. In a mixing bowl, thoroughly blend the beef mince, egg, breadcrumbs, 1 tsp oregano, and garlic powder. Shape the mixture into golf ball-sized meatballs and place them in an oven-proof dish. Bake in a preheated oven at 170 degrees for approximately 15 minutes until fully cooked.

  2. While the meatballs cook, sauté the diced onion in a frying pan with a teaspoon of oil until softened. Add the diced garlic clove, chopped tomatoes, tomato paste, stock pot, and the remaining oregano. Simmer this aromatic mixture for about 7 minutes.

  3. Once the meatballs are done, remove them from the oven and proceed to chop the focaccia into bite-sized pieces. Place the focaccia in the oven dish alongside the cooked meatballs. Pour the prepared sauce over the meatballs and focaccia, ensuring everything is evenly coated. Sprinkle grated cheese on top and return the dish to the oven for approximately 10 minutes or until the cheese is perfectly melted.
