Ingredients
- Olive oil
- Baker Tom’s Rustic Baguette
- 400g cream cheese
- 200g goat’s cheese
- 2 peaches
- Honey
- 50g walnuts
- Fresh thyme
- Salt & pepper - we like Cornish sea salt - salt & peppery
Method
Begin by heating a griddle pan over a medium-high heat. Slice the Baker Tom’s Rustic Baguette into crostini-sized pieces and lightly drizzle with olive oil before griddling until crisp and golden on both sides.
Slice the peaches into wedges, removing the stones, and lightly coat with olive oil. Place onto the hot griddle pan and cook briefly until softened with lightly caramelised edges.
In a bowl, combine the cream cheese and goat’s cheese, mixing until smooth and creamy. Season with a pinch of salt and black pepper.
To serve, spread the whipped cheese mixture generously over each toasted baguette slice. Top with grilled peach wedges, drizzle with honey, then finish with crushed walnuts and fresh thyme leaves.
